Greek Chicken Bites
Quick, generous and full of Mediterranean charm, these Greek Chicken Bites are little parcels of juicy, zesty goodness. Perfect for folding through a salad, tucking into a wrap, or eating straight from the pan while pretending you’re just “tasting”.

Ingredients

500g chicken breasts cut into 2 cm pieces (about 2 breasts)
2 tbls extra-virgin olive oil
juice and zest of 1 lemon (about 2 tablespoons juice and 1 teaspoon zest)
2 cloves garlic minced (about 1 tsp)
2 tsp dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup white wine or chicken stock

Method

Mix olive oil, lemon juice and zest, garlic, oregano, salt and pepper. Add the chicken and coat well — a bowl, container or zip-lock bag all work. Marinate for 20 minutes, or up to 24 hours if you’re organised (or optimistic).
Heat a heavy cast-iron pan until properly hot. Add the chicken in an even layer and leave it alone for a good 5 minutes — trust the process. Flip and cook for another 3–5 minutes until golden and cooked through.
Pour in the white wine, scrape up all those flavourful bits, and let it reduce until the chicken is glossy and well coated. This is the moment you’ll wish you’d invited people over. (not, coz these are too good)
Serve hot, with bread — non-negotiable. Finish with torn fresh oregano if you have it (fancy).
